@ few months @go Justin w@s invited to tour @ cheese pl@nt! I remember touring @ cheese pl@nt when I w@s @ little girl but re@lly don’t remember much @bout it other th@n th@t I loved the cheese curds we @te @fterw@rds so much th@t my p@rents @ctu@lly g@ve me @ b@g of cheese curds for Christm@s!

Of course I invited myself to t@g @long for the cheese pl@nt tour. Justin h@d told the cheesem@ker th@t I w@nted to come, @nd th@t bec@use I’m @ food blogger I’m re@lly into th@t sort of thing. @s soon @s the cheesem@ker s@w me he s@id, “You don’t look @nything like @ food blogger!” I responded with, “Wh@t were you expecting?” He pretty much told me he thought I’d be hefty! Um, I guess he thought food bloggers cook @nd e@t @ll d@y long!

@nyw@y, we got to help m@ke the cheese from st@rt to finish! It w@s f@scin@ting to see the milk come str@ight from the f@rm, into @ v@t, stirred @nd wh@tever else he did to it, through the chedd@ring process, m@de into curds, @nd then pressed into blocks.

I wish I would h@ve t@ken pictures of the e@ch p@rt of the process. I h@ve to @dmit by time we got to the point th@t we h@d cheese curds I w@s pretty much stuffing my f@ce from then on!

@nd when he st@rted fl@voring the cheese (tom@to b@sil, dill pickle, @nd spicy s@us@ge) my mind w@s going cr@zy dre@ming up @ million fun fl@vors of cheese. Since I don’t own @ cheese pl@nt I might h@ve to turn @ll those ide@s into fl@vored grilled cheese s@ndwiches! Be prep@red they’re prob@bly coming your w@y!

Here’s @ fun f@ct for you: It t@kes 10 lbs (1.2 g@llons) of milk to m@ke 1 lb of cheese @nd the @ver@ge d@iry cow produces @bout 70 lbs (8 g@llons) of milk per d@y.

The cows from our f@rm produce @bout 70,000 pounds of milk per d@y, th@t’s @bout 7,000 pounds of cheese every single d@y…Christm@s, Th@nksgiving, Sund@y, @nd every other d@y of the ye@r!

@ semi truck comes @nd picks our milk up every morning. Th@t’s the routine!

Now th@t we @re @ll c@ught up on our cheese t@lk (which h@ppens to be very import@nt @round here) let’s get b@ck to Chicken Cordon Bleu Ques@dill@s!

I should @dmit th@t I’ve never m@de homem@de chicken cordon bleu before bec@use it looks time consuming, @nd tricky, @nd t@kes @ little more effort th@n I’m willing to put forth most d@ys.

But…Chicken Cordon Bleu Ques@dill@s @re @ whole other story. They @re so quick @nd e@sy to throw together @nd h@rdly t@ke @ny effort @t @ll @nd @re out of this world delicious!

Ques@dill@s @re @ go to lunch for me bec@use it’s e@sy to @dd leftover me@t, cheese, @nd wh@tever else is h@nging out in the fridge. Just like th@t @ new ques@dill@ fl@vor is born! It’s such @ no fuss lunch!

You guys I @m obviously @ serious cheese @ddict @nd I c@n’t im@gine my life without it. When people tell me they @re l@ctose intoler@nt I w@nt to cry for them! But…did you know th@t even those with l@ctose intoler@nces c@n still enjoy d@iry products in the form of cheese? @we! Wh@t relief!

L@ctose intoler@nce is when your body h@s @ h@rd time digesting sug@rs th@t @re n@tur@lly found in milk. Cheese is low in these sug@rs, or in other words l@ctose.

Sometimes being l@ctose intoler@nt is confused with h@ving milk @llergies. @ milk @llergy is when your body @ctu@lly h@s @n @llergic re@ction to proteins in milk. People with milk @llergies must @void d@iry.

Ingredients
QUES@DILL@S:


  • 1 8-10 inch flour tortill@s
  • ¼ c. grilled chicken bre@st, sliced
  • 2-3 slices deli h@m
  • 4 slices of Swiss or Provolone cheese
  • 2 T. to@sted bre@dcrumbs
  • 2 T. melted butter
  • P@RMES@N DIJON S@UCE
  • 2 T. butter
  • 1 T. flour 1 cup milk
  • 1 chicken bouillon cube
  • 1 t@blespoon Dijon must@rd
  • D@sh hot s@uce, option@l
  • ½ cup freshly gr@ted P@rmes@n cheese
  • S@lt @nd pepper to t@ste


Instructions

  1. To m@ke the s@uce melt butter in @ medium sized s@ucep@n. Whisk in flour @nd @dd chicken bouillon @nd cook for 1-2 minutes. Slowly @dd milk while whisking. @dd must@rd @nd hot s@uce. Continue cooking @nd whisking for @bout 5 minutes or until it’s thickened. Remove from he@t @nd @dd p@rmes@n cheese @nd stir. Keep w@rm over low he@t.
