This Snowy Chili Cheese Dip is such an easy appetizer! Stir together some cottage cheese, salsa, avocado, green chilies, more Mexican fixins, scoop it up with some Fritos and you are on your way to couch potato heaven.
Last week I was complaining to Eric because I hurt my back doing yoga. (I know. I’m like 28 going on 75. Pathetic.) I’ve never really hurt my back before, so I had a lot of complaining-ground to cover. “Eric, I can’t sit.” “Eric, I can’t stand.” “Eric, it really hurts, why does it hurt so bad??”

Although really I should have done better. Eric and I saw these short comics about saying what you really mean several weeks ago and we are trying to implement them. (And when I say we, I mostly mean me.)
I say sorry all the time when what I really mean is, “make me feel better by telling me it’s okay.” It’s a terrible habit. Here’s to saying “Thanks for listening!” more often. Do you guys say sorry too much? Am I the only one?
So who’s watching the Super Bowl this weekend? Need food ideas? This is the easiest dip ever and extremely dangerous because I can throw down an entire batch single handedly. Okay maybe not the whole batch, but I have some pretty close. I don’t think I ever really appreciated cottage cheese before discovering this dip.
One of the best parts about it (besides how EASY it is) is that it’s so adaptable. Don’t have tomatoes? Throw in more salsa. Don’t have cilantro (or don’t like it?) Leave it out. This dip can be as simple or as elaborate as you want it to be. You can even use regular tortilla chips if you want, but personally I think Fritos are best. They just have the best corny flavor!
For Christmas this year we decided that instead of making a huge meal we would munch on a ton of appetizers all day. (We always do a big Swedish Christmas eve anyway. It was nice because we got to spend Christmas day hanging out instead of peeling more potatoes. I’m a fan.)
My sister-in-law Britta made this dip as her contribution. You know how there’s always that ONE dish that disappears before everything else? This one beat all the other appetizers that night. There was only a tiny bit left at the end of the night. The next day Eric and his dad and I huddled in a corner and scarfed it while no one was looking. We got in trouble for not sharing…oops. So I made another big double batch. It’s THAT kind of recipe.
January is so last season, guys! It’s time to eat our weight in cheesy dip!

Snowy Chili Cheese Dip
Serves Serves 10. Or maybe just 2.
Ingredients
- 1 pound container of cottage cheese (any fat content you like)
- 1 (4- or 7-ounce) can diced green chiles, slightly drained
- 1 large tomato, chopped
- 1/4 to 1/2 cup salsa
- 1 (or 2!) avocados, chopped
- 1 teaspoon salt, or more to taste
- 1/2 teaspoon chili powder
- dash cayenne pepper
Optional
- 1/4 to 1/2 cup cilantro, chopped
- sliced or chopped jalapenos
- green onions, chopped
- fresh lime juice
- 1 to 2 (9 ounce) packages Fritos (the scoop kind)
Instructions
- In a medium mixing bowl, combine cottage cheese, green chilies, chopped tomato, salsa, avocado, salt, chili powder, and a dash of cayenne pepper. (You can drain the green chilies all the way if you want. I usually just open the can and use the lid to strain out the liquid right at the top.)
