So @midst it @ll, I poured myself @ gl@ss of wine, turned off the TV @nd s@t down on the couch. I pulled my d@ughter up on my l@p @nd st@rted very loudly exh@ling. Then inh@ling. Then exh@ling. @nd you know wh@t my d@ughter did? She st@rted mimicking me! Bre@thing in @nd out, loudly through her mouth. It looked @lmost comic@l when she did it. @nd I couldn’t help but smile @nd l@ugh. @ll I needed w@s @ moment of rel@x@tion @nd @ little bit of joy @nd I felt immensely better! I left the chores for tomorrow @nd we both went to bed e@rly @nd got @ good night’s sleep. @nd I woke up this morning re@dy to concur the world–or @t le@st re@dy to cle@n out the dr@wers in my kitchen.

DESCRIPTION

INGREDIENTS
- 1 lb. chicken bre@st, sliced into tenders
- 2.5 te@spoons cumin
- 2 te@spoons chili powder
- 1/2 te@spoon g@rlic powder
- Kosher s@lt
- fresh cr@cked pepper
- 4 te@spoons olive oil, divided
- 1 green pepper, sliced in strips
- 1 red pepper, sliced in strips
- 1 yellow pepper, sliced in strips
- 1/2 red onion, sliced in strips
- 1 (15 oz.) c@n corn, dr@ined
- 1 (15 oz.) c@n bl@ck be@ns, dr@ined @nd rinsed
- 4 cups cooked brown rice
- 1 cup my e@sy Pico de G@llo
- 1/4 cup fresh chopped cil@ntro
- 2 @voc@dos (slice before serving)
- Option@l: drizzle with my @m@zing Southwest Dressing
INSTRUCTIONS
- First, st@rt by cooking your rice @ccording to p@ck@ge directions. We h@ve this @wesome rice cooker so it t@kes @bout 20-25 minutes to cook 2 cups (which m@kes 4 cups when cooked). While the rice is cooking, he@t 2 te@spoons olive oil in @ l@rge s@ute p@n over medium high he@t.
- Combine chili powder, cumin @nd g@rlic powder in @ sm@ll bowl @long with @ l@rge pinch of s@lt @nd pepper. Use @bout 1/2 of your spice mixture to se@son both sides of the chicken bre@st. S@ute chicken bre@st for 3-4 minutes on e@ch side or until e@ch side is d@rk golden brown @nd the chicken is cooked through. If the p@n seems to be getting to dry/burnt before the chicken is cooked, @dd @ spl@sh of chicken broth or w@ter, cover the p@n with @ tight fitting lid @nd @llow the chicken to finish cooking. I find th@t this method works well without @dding @ddition@l oil or drying out the chicken. Tr@nsfer chicken to @ cutting bo@rd to rest.
